It can recover damaged knives, and eliminates the need for a honing steel (a task I despise). A few strokes through it and you are professionally sharp again. Totally worth it. But it is pricey. The two-stage version (same link) is half the price but can't fix a damaged edge.

I own both a Chef'sChoice 15/XV + a few whetstones. If used properly, the Chef'sChoice is roughly equivalent to using the whetstone with at least a medium+ amount of skill. It produces a narrower angled blade (15 degrees versus 20), but this is fine if you are fine with the difference, if not, Chef'sChoice makes a US version of the same sharpener as well. Th

I finally splurged and bought a Chefs Choice motorized sharpener and I love it. It sharpens your knives at a different edge angle and they stay sharper much longer. Resharpening all 12 of my Wusthof knives takes maybe 10 minutes.

I've had it for maybe seven years now and use it 1-2 a year to do all the kitchen knives. If you just need to hone, you can just do the 3rd step. If you're trying to grind out big notches, you can spend more time on the first step before moving on to 1 and 3.
