Buy a set of Cuisinart Multiclad Pro - the 7 piece set is enough, and has done well by me. Heats pretty fast and evenly, extremely durable

My best advice is be very careful about how much heat you use, and especially how quickly you change the temperature, because mine warped if you even looked at them wrong.

Both are right around 200 bucks and are full 12 piece sets; pretty sure you can get the smaller sets for less.

Fully clad pans (like that specific Cuisinart, or AllClad - the gold standard) are quality thick stainless laminated over aluminum. They rarely (not never) warp, can't break (I guess the handles can?), they heat evenly maintain heat better which leads to safer cooking and better results.

If price is absolutely not a concern the best manufacturer for cookware in my experience has been Demeyere. The Industry line for upper mid pricing, and the Atlantis/Proline in the highest end. What sets these apart is their Silvinox finish that is a steel treatment kind of similar to anodized aluminum.

Hopefully OP's household is already used to hand-washing the cookware, coming from nonstick :) I agree sets aren't the best for most people, there's usually one or two pieces that you'll rarely use and then the set isn't any more cost-effective than buying individual pieces.

If you handwash it's a non issue. 2) The Cuisinart has rounded edges whereas Tramontina is straight. This makes pouring easier. 3) The Cuisinart had a non-slip grip versus a rounded grip for their handles.

I’m no expert in stainless steel cookware but I have learned a lot over the last month as I replaced all of my non stick pans with clad stainless steel pans. Mostly triple ply, because it’s cost effective and responsive.
