I love my Greenpans. You just have to be sure to follow the manufacturer’s guidelines and not overheat your pan.

Greenspan also performed poorly in terms of temperature variation. The non-stick however is good but it does not last! Mine lasted for 7 months.

Indeed, that is my general assumption. That since the 11" isn't in their collection kits people mostly overlook it as a single purchase and so they're dumping stock to discontinue.

Hah! Now I'm super curious. I forgot to mention that I've only had these since Nov 2023,so they are relatively new pans as well. Probably the answer is just to not use ceramic...

I believe the 8/10/12 inch with the lighter colored interior are the newer pans? Hard anodized and the ones reviewed by ATK, complete with how to cook truly nonstick with them.
